The best edged pocket hunting knife I own is 440C stainless and CPM makes a stainless steel very similar to 3V. My main fault with most knives is the heat treating. Knives are made softer than I would prefer. I have some that can be filed!

The best value in store knives are the "professional" white plastic handled affairs available for almost nothing in restaurant supply stores. The ones I got have as good as or better steel and heat treat than either the Henckles or Victorinox.
