I say if it works, use it! Don't be afraid to experiment. And I agree about getting it sharp and getting back to work. For chisels this is all fine but be careful if using a convex bevel on a bevel-down plane iron. Avoid creating a bevel that's too steep right at the cutting edge. A plane iron needs relief (clearance) behind the cutting edge or it won't cut (and it'll drive you nuts if you don't know to look for it.) For a standard Stanley-style 45 degree bed bench plane, the maximum bevel angle is about 33 degrees depending on the type of wood you're planing (dry hardwoods can be planed with less relief.)
