How much pith to remove?

>Got some elm off a recently felled tree. Center is significantly darker than the remainder of the wood. How much of the pith do I need to remove when rough turning wet wood to minimize cracking? I noticed in the picture of the ash bowl below, it seems as if most of the pith remains.
