Looks like the Jet Mini, now wood?

>Looks like most agree that the Jet Mini lathe is the one to start on. Which wood would be best to learn on? I have mahogany, cherry, walnut, maple, and pine in the shop now. I also have some turning squares of Gonzalo Alves and Bubinga, but don't limit to these.
