Lacquer Finishing Question

>As you all know by now, I finish all of my segemented bowls with lacquer.

My basic process is; to apply 4-5 heavy coats of full strength (not thinned) hiqh quality - High Solids lacquer; allow it to set for 2-3 days then sand with 220-400 until level (no grain/defects showing; then spray a couple more coats; allow a week or more to dry and then sand a polish to completion.

Question: Why is it that with open grain woods (Walnut, Paduak, Oak, etc) I can sand level - so that it is absolutely smooth, and then when I spray it again with lacquer, I will see the grain again??
