Drying and storing burls

>We need to cut down a recently dead California pepper tree (Schinus molle) at my parents' house. This species, in its old age, develops burls like mad on the trunk. It's going to be a couple of years before I can do any turning (the list is: 1. pay off house; 2. retire; 3. build larger shop; 4. refurbish and install lathe; 5. turn), and I'm wondering if these burls can be successfully dried and stored until then. Any advice?
