Another Natural Edge Bowl Question

>Following up on my earlier post, if I make the cherry bowl from wet wood it is going to change shape as it dries. I assume I can sand to some point while the wood is still wet. I would think though, it will still have raised grain once it dries. To what grit should I sand now and, at what point can I apply the finish?
