Bagging Rough-outs

>Just started turning. Got some free freshly cut bigleaf maple and roughed out the bowls. Was told not to put them in paper bags as this promotes spalting. Others say to use paper bags. What should I do if I don't want spalting nor splitting? Bowls are stored in an unheated shed out of drafts and sunlight.
