Tear Out - Soften or Harden +/-

>I have a couple of nice looking curly/lightly spalted maple blocks that I hope to turn into bowls with minimal tear out. To minimize tear out I am considering either hardening with wood hardener or softening with mineral oil. What are the pluses and minuses of each?

The spalting appears to be rather light and very dry at the moment, but has presented some nice mottled figure/coloration. The wood is supposed to be curly, big leaf maple, but the smell is "molasses/sweet" making me think it is sugar maple (any difference?).

I'm curious how each will effect finishing/color and which one will present the best work-a-bility.
