When is a blank unfit for a salad bowl?

>Terry Daniel’s post “insect spray and salad bowls” created a question for me that I could not answer. At what point is a bowl blank unfit for a salad bowl?

If the blank has insects in it must have holes and if it has holes is it safe for salad and food? Wont food particles hide in these holes and rot?
What about spalting (rot-fungus), at what degree of rot do you say it is not acceptable for food? When the bowl-dish is washed wont the fungus be activated by the water? If I use a surface finish, it will wear with use and eventually trap the moisture underneath it.
I have many roughed bowls in various stages of spalt, some small wormholes and would appreciate feedback.
