Ambrosia Maple

>I got some lovely ambrosia maple, rough turned a number of pieces, waxed and set them aside to dry. When I started to finish turn I was disappoined to find that some of the white portions that contrast so nicely with the dark brown streaks had turned an ugly gray color. Does anyone know what might have happened? It appears to be thru the wood and turning deeper doesn't remove it. All of the pieces were turned end grain but the color change didn't happen to all of them. I'd appreciate comments.
