An alcohol question

I have a question.

My understanding is that the alcohol is supposed to replace the water in the wood and then evaporate more quickly than water would.

Thus drying the bowl more quickly.

That water must then have been left behind in the alcohol container. If the alcohol is replacing water then the alcohol left must not be pure alcohol or there is a layer of water below the alcohol.

Is there any way to tell what percentage water is in your alcohol so you know when it is no longer useful?
