Vacuum Drying (Long)

With a friend I have recently built a Vacuum Kiln and using an old freezer compressor can get the Vacuum to a steady 27 whatever you call the measurement in a vacuum.My question is this, can anyone tell me why the moisture loss is greater when the outside temp is lower. The piece I have drying has dropped from 24.8% to 19.3% in three days but seems to drop more overnight than during the day. I will add, that here in Perth Australia the average day temp at the moment is 33c. I would apreciate any opinions and perhaps someone can tell me what the measurement is called..Thanks for reading..
