What size Tennon

>Do most of you use? I have yet to purchase a chuck. I'm just curious what size tenon you would use for a piece of cherry 8" in diameter and 6"deep? I'm turning a piece of cherry which has some very very wierd grain it's a section from a limb wound, therefore the limb pith is coming out right in the dead center of the top of my bowl. I'm having a very dificult time with glue blocks. First the piece flew off the lathe with a catch. Then the base of the cherry tore apart with the next catch. I guess I need more surface area to glue to, or a sharper too with lighter cuts. Maybe I should drill the pith out as well?
