Pepper Mills, Advice Please

Dare I venture into another aspect of turning for profit or gifts, yes, the pepper mill looks like fun to me. I need some advice though before I flatten my spirit and spend some cash, the drilling process looks simple but the size of the bits and lengths are not clicking well in my head right now.

Some kit suppliers sell kits for mills that are 14. 16, 18+ inches long, how do you drill the body for those with a 1 diameter bit? What are your best practices and tips for making peeper mills please,
