Black Cherry Sapwood Stain

>Does anyone know the cause of reddening/blotchy stain on the drying surface of Black Cherry sapwood? Is it oxidation, bacterial, fungal? I would like know in order to come up with an efficient way of keeping the sapwood as white as possible on green turned bowls. Fast drying with the aid of compressed air helps, but takes an undue amount of HP.
