wet wood question from a newbie

>I am a novice turner - made lots of pens and now getting into bowls. Took a 3 day bowl turning class and am hooked.

My question is about turning blanks that I purchased at Rockler (I know I need to start finding free or less expensive wood!) I understand that the bowl blanks are not kiln dried, so I presume that means they are wet. Do I need to treat them as I would green wood, i.e. rough turn and let dry for appropriate amount of time? If I decide to take my chances with movement, do I complete the bowl, then let it dry, and then finish?
