Which grit for gouges?

>I need to replace the original 120 grit white wheel that came with my slow speed grinder, but I'm confused as to what grit size to order. I currently have a 60 and the 120. I've sharpened gouges mostly on the 120, since I thought 'the finer the grit, the sharper the edge'. However, it seems to me that many turners use a lower grit for gouges. If so, is that to avoid the buildup I get on my 120 grit? Or does it produce a better edge? Does a lower grit also wind up taking off more steel than necessary?

I'm sure many of you have your own grit preferences, but does anyone have any scientific info on this question? Thanks in advance.
