Shop Ceiling?

>I am doing the inside of my shop with ply walls and was going to put the same thing on the ceiling. My builder says I should put drywall on the ceiling so the joints could be better sealed against heat loss. My idea to use ply was so I could hang light stuff (air hose, ducts, additional spot lights, etc. ) from the ceiling without worrying about finding a joist. What advice do you guys/gals have? All walls and ceiling will be painted white, BTW. I think it takes less force for a flying chunk of wood to go through drywall than it does ply.
