roughing an end grain bowl or vase

I have a chunk of wood that I think will make a nice pair of bowls or a vase. I haven't turned end-grain before except for a bit of practise with the Oneway tool. Hey, I'll give it a spin!

Should I rough turn the blank with thick walls like I would for a cross grain bowl along the 10-15% of diameter ROT? Do I wait a few years for the blank to dry on its own? I don't want to ruin a nice splated maple blank (two of them actually) because I screwed up basic procedures.
