Just got back - Hollywood

>So a friend gave me some pieces of holly that he cut down a few weeks ago. They are about 5" - 6" in diameter, and a foot or so long - I'm thinking ornaments, finials, etc..

All that I know about holly is that it is very white. Does it age well, split, turn color, etc? The ends were almost black, but inside it is a creamy color. Any words of wisdom??
