Can wood ferment?!

>Yesterday I cut into a Sweet Gum crotch piece that has been sitting in the yard for about a year. Heavy spalting and wonderful color patterns greeted me along with a powerful smell. I felt like I had my head in a well used whiskey barrel.

Is there enough sugar in Sweet Gum to cause this or was I just imagining?
