Pith and Bark. Newbie question.

Suppose you were going to use up a bunch of cherry or walnut scraps to play around making your first bowl. These scraps are all from rough sawn lumber and you are going to joint/plane them enough to be able to glue them into one decent size chunk of wood to butcher on the lathe.

I would think you would glue them together so the bark side is all towards the same side, right? Like a green piece of log. Secondly, does the pith side or the bark side end up being the bottom of the bowl? Does it matter?
