Kiln drying question

>I got to wondering. Why is it that we put sealer on our blanks to let them dry slowly so they won't crack and others put their blanks in a kiln to dry them fast and they don't crack? Do the kiln drying people put sealer on their blanks? Do they have more or less losses from cracking?
