Large flat surfaces...

>I've turned a few big platters and I was wondering how everyone goes about making the "field" of the platters "dead-flat"? No little pips in the middle, or wavies when viewed at an angle...

Seems that there are tradeoffs between cutting (harder to control the little wavies) and scraping (cleaning up tearout).

What cuts/tools/methods do you all use?
