Turning Red Oak Posts

>I want to turn some bed posts from some red oak branches that I have (6" to 8" diameter about 4 feet long). They are green and have the bark on and end sealer applied. Should I let dry for some period before turning or do I rough turn and then let dry, or do I go ahead and finish turn and apply a finish to help seal? These do not have to be 'high grade' furniture quality but if that is possible then all the better. Any insight would be greatly appreciated. Thanks.
