Sanding question

I have a request from my wife's sister for "something turned" for Christmas. I have decided on a walnut platter/plate and a mahogany bowl. So here is my question. These two items, for reasons I cannot go into here, need to be perfect (or a fairly close proximity). In the past sanding has been my bane. So, on those things that you make that have to be high quality what is the sanding prodcedure that work best for you. I usually power sand with Steve Worchester disks. What speed do you sand at? Do you sand with the lathe in reverse? Do you spray water on it to raise the grain? What are your steps to get a superior sanded piece? Thanks for your help.
