Favourite Species

>I was turning a maple bowl today, and looked at my boxes of roughs. Got me thinking. I would say about 40% of my roughs are maple of various subspecies, and grades.
A few exoticcs, a few domestics, and a good sized bit of walnut.
What is your favourite species, and why? Is it because it is most readily available? Also, are you primarily a green turner, or do you tend to turn dry blanks?
