Which is sharper?

>I believe I know most of the advantages of HHS over carbon steel. But I have this idea (which I picked up somewhere -- so it's not new with me) that carbon steel can actually be sharpened to a sharper edge --even if it doesn't last as long ,etc. Is there any truth to it? Perhaps someone with deep knowledge in ceramics could provide a scientific answer.
