>When Dan was here doing our cooking at the Gathering he had a newfangled contraption that gave him the meat temp without raising the lid of the smoker. I just bought one from Ace, ($20, made in China) that let's me sit inside my shop and see the inside temp of the meat that is outside in the smoker. It even has an alarm that tells me when it is within 5 degrees of the final temp and another that goes off when the temp is reached. I bought a case of Dan's sauce and I have plenty of wood scraps, (hickory, cherry, mesquite, etc) so now I am on a roll. Anyone hungry?
