Saving Cedar *PIC*

>I turned this while on vacation at my in-laws, only my second turning. My father-in-law owns the lathe, but is actually more inexperienced than I am and insisted on running all-thread through the center for safety; thus I had to plug a whole in the center. He also insists that this cedar will "bleach out" and lose it's luster turning brown & tan instead of staying the red & yellow it is now. Is this true, and is there any way of finishing this piece food safe so that it maintains its color?
