Finishing Box Elder Bowls

>Does anyone have a favorite method of finishing Box Elder? I normally use Watco for bowls, but it yellows after a while. I also use Minwax polyurethane, rushed on and allowed to penetrate for a few minutes, then wiped off.

I would like an in-the-wood finish that doesn't impart yellowing to the beautiful creamy white color of Box Elder. I could always use Deft spray-on, but I would like something a bit more durable. Any suggestions? Thanks.
