Best method for turning platters and plates

>I know it's been answered before, but I wanted to see if anyone has a really quick and sure fire way to turn a platter or plate from a round disk of wood without using a screw chuck or sacrificial faceplate block. I used to have a set of Oneway elephant jaws or whatever you call those things, but they melted along with everything else in the great fire of '99.

I've probably turned a hundred plates in my life but I never recall any feeling easy to do.

Any help?
