Finishing platter

>Hope you will put up with novice and questions on turning. Thanks to those who helped on sanding inside hollow forms. Turned my first little platter in hard maple. First time to chuck inside of a base and practice on shear scraping. Was very pleased with it but should have left well enough alone. I felt with cutting into differnt levels of grain and end grain I used a sanding sealer before I put on a colonial maple stain to try and show off the grain better. MISTAKE!
I still ended up with a splochy finish as some areas still took stain heavy and others very little at all. Now only recover looks like paint it black! I would take suggestions on how to get a uniform finish when turning a platter and differnt levels of grain to deal with. Thanks.
