It changes the angle that the two bevels meet at, but what mystical thing is that good for. It thins the edge of the tool. Why is that good? How does the wood "know" That the top bevel is even there? Couldn't you just change the angle of the bottom bevel to get the same angle with the top of the tools and skip the top bevel? You'd have to adjust the height or angle of the handle, but why not?
