Greg I do play with burr's. Everything from a burnisher to diamond hones of different grits and straight off the grinder. There is definetly a diffence and it depends on the hardness of the metal and how you use the tool which method works.
I suppose what I need to do is to take a sharpened skew and cut with it. Then raise a burr on it (wow that would hurt to dull a tool) and see how it cuts differently. That may be a test tomorrow. I plan to try and play in the shop a little tomorrow.
