Fresh red oak

I have come into a large stash of red oak logs and I've never worked it green. I recall reading that it will crack and check as you look at it. Have I got that right? Am I mistaking it for something else? I want to make a few display-type bowls and some hollowforms (which I will finish turn green).

Opinions? Knowledge? Experience?
