I've tried various means of coloring wood (dyes, paints, iron acetate solutions, etc.) but I am most pleased with the results provided by leather dyes from Tandy leather. Inexpensive, convenient, and very effective. I apply the dye to dry wood, allow to dry, lightly sand, and repeat dyeing. USMC black allows one to make ebony from almost any wood. Some of the red dyes also work well, and I assume other colors would be equally effective.
