Hi Tom,
It can still be done without the large cone center, but it depends on the thickness of the pieces. You could screw a smaller diameter disc of plywood on the top of the quadrants (into the waste area) and then press your live center onto that so you could still pull a segment to check the profile.
If the segments don’t need to be that thick, then perhaps screws alone will work, though I think there is an advantage to using the live center when you can- less vibration means a smoother cut = better surface = less sanding = more profit.
