Head scratcher

In my "other life" I'm a Chef, and it was yesterday that I was labourously scraping a 5 kg slab of chocolate to get shavings to decorate a cake, that the lighbulb went off. Why not use a plane or shave to scrape the chocolate? Currently I hold a sturdy chef's knife at an almost verticle position and draw the knife towards me, scraping off chocolate in the process.

I currently have a LV BU jack and smoother, a old post 60's Stanley #5, and a cheapo #51 clone India made shave--none of them do a satisfactory job of shaving chocolate. That being said, if I use the shave on the edge of the chocoalte slab, I do get some shavings, but even though I have a solid maple baker's table at work, it has no vice or holding devices to hold the slab on edge while I shave it....

Any suggestions?
