I can't answer your question, but I know who can. Contact Barbara Gill on either the main board or on the Turning board. She has lots of experience both in sawing and in drying, including beech. IIRC several years ago she sold some quarter sawn beech stock to Larry & Bill of Clark & Williams when they were having trouble getting stock. To my mind that's a pretty good endorsement of her expertise.
