Use what you've got right now, and 8000g is just fine. If the steel is super blue steel, I would add some fine print, but otherwise you're good with the stones you have. The expensive chisels should be easy to flatten. In regard to diamond media, it does make deep scratches in very hard steel, but those scratches will lap out. As you said, Japanese steel is clean, and will respond well to your everyday methods.
