I'm thinking you can maintain everything in a jig then, and fixture something to a buffer holding the chisel that won't move backwards even if your brain sends an inverse signal, but will move forward a small amount.
If it's slow to get the chisel back out and you buff for a few extra seconds, it won't be a big deal - it takes a lot of buffing to really make things go bad.
two runs of sandpaper with a guide would also be OK for setting the primary bevel and then secondary (or two small belt sanders).
