When I had to trim end grain on the last case, I found an incannel gouge miles easier through end grain. I have no idea why they are like that. The whole unicorn thing came out of trying to find a way to keep the gouge in shape with supreme sharpness without much effort.
For anyone who hasn't cut across end grain with an incannel gouge, you can literally take a crank neck gouge and just push it across hardwood end grain. A chisel of any width, not even close.
