I agree, Bill. I can still remember the stone my grandfather sharpened their butcher/kitchen knives on. I don't know about across the width, but it was severely dished from end to end. He used it for all of his old carbon steel knives. They butchered all their own pigs and chickens, along with wild game, along with general kitchen use. And I can tell you, those knives CUT!
