Might I suggest (ducks) hard rock maple.. for some test/practice turning

It actually works pretty well for this sort of use case, and is imho a bit easier than some of the more brittle stuff like ebony. Cherry is also quite nice but I think rock maple might be very slightly easier in this use case as cherry can bruise a bit easier if you don't have the bevel floating nack as much yet.
