I don't do much chair work with kiln dried wood (except the rungs), but sometimes work with air dried wood (maybe 12%MC). This is always harder to work with than wood harvested from a recently opened log. But removing the sap wood with a drawknife is still the hardest task. And the toughest wood is always at the boundary with the heartwood. At least it seems this way because once you get into the heartwood the work is noticeably easier.
