Hi Jeremy,

I have done the mortise method you describe, making one half the handle thicker than the other by the thickness of the knife shank. It works. A little messy, because you will inevitably have some epoxy squeeze out, but that is manageable.

Here is one other possibility: Years ago, I received from the amazing John Aniano this ‘bamboo leaf’ knife, made from a file and leather:

This is the most satisfying handle covering ever on a skinny handled tool, in my opinion. Of course, there is the animal factor which I won’t get into.....
