Bill,
I have a rest that I rest the iron on but nothing to keep it square. When I go back and forth I go use the left of center, then center, then right of center parts of the wheel because I am angling the blade as I work. The wider wheel gets even use, and I don't have to dress as frequently. But you method on a narrower wheel will work fine too.
