The first grinder I had, I replaced the coarse gray wheel with a fine white wheel. It had heat problems, but I learned to use it. The gray wheel had terrible balance but because of the coarse grit, it ground cooler. It was a $6 wheel kind of thing - molded center.
Since then, I haven't had a burn issue with anything, but I've seen a lot of posts from people who say they do. For a long time, I've cooled an iron by dragging it across my palm. The only irons that really challenge that are HSS since they'll generate more heat when they grind (but it doesn't matter).
I get the sense that the edge issue with the stanley chisels in Derek's test is probably something solved by two or three more degrees of final bevel.
